Ingredients
Coconut mix

1Β½ cups unsweetened coconut milkΒ
- 1 tsp vanillaΒ
- 2 tbsp icing sugarΒ
Blueberry mix

1 punnet fresh blueberriesΒ Β
- 2 tbsp lemon juiceΒ
- 2 tbsp icing sugarΒ
- 1 orange, squeezedΒ
- 2 scoopsΒ Red ShotΒ
Method
Coconut mix
Mix all the ingredients together in a jug and pour into 6 popsicle moulds.
Place in the freezer for 30 minutes to partially freeze.Β
Blueberry mix
Place all the ingredients into a blender and blendΒ until smooth.
Pour through a sieveΒ (optional,Β ifΒ you prefer aΒ smooth ice block).
Spoon into theΒ centerΒ of the partially frozenΒ coconut mix and place back in the freezer until frozen.
When ready to serve, dip the moulds intoΒ boilingΒ water to loosen.
ServeΒ immediately.
