Chia seed mix
- β Β cup chia seeds
- 1Β ΒΌ cup milk (or use almond, rice, oat milk)Β Β Β Β Β Β Β Β
- 2-3 tbsp honey or maple

1 tsp vanilla extractΒ
- Β½Β cup natural yogurt, dairy or plant-based
Strawberry puree
- 1 cup strawberries, fresh or frozenΒ
- Maple syrup to tasteΒ
- 2 scoopsΒ Red Shot
- Extra fresh berries to serveΒ
Granola
- 1Β Β½ cup jumbo oatsΒ
- Β½Β cup mixed nuts, roughly choppedΒ
- Β½Β cup thread coconutΒ
- 1 tbsp each pumpkin & sunflower seedsΒ
- ΒΌΒ tsp each cardamom & nutmegΒ
- ΒΎΒ tsp each cinnamon & gingerΒ
- ΒΌΒ cup maple syrupΒ
- ΒΌΒ cup coconut oilΒ
- Pinch saltΒ
MethodΒ
Granola
Preheat oven to 160Β°C.Β Β Β
Melt the coconut oil & maple syrup or honey together in a saucepan on a low heat.Β Β Β
Take off the heat, add all the remaining ingredients and stir until well coated.Β Β Β
Line a baking tray with baking paper and spread out the granola into a thin layer.Β Β Β
Bake for around 15 mins until golden and crisp.Β Β Β
Set aside to cool. Store in an airtight container.Β
Chia mix and strawberry puree
Pour the chia seeds into a jar.Β Β Β
Add the milk, maple syrup or honey and vanilla and shake the jar to mix together.Β Stir in the yogurt.Β
Cover and soak 1-2 hours or overnight.Β Β
Puree the strawberries and Red ShotΒ together and add maple syrup to taste.Β Β Β
When ready to serve, spoon the chai seed mix into glasses alternating with the strawberry puree.Β Β Β
Top with granola and extra fresh berries if desired and serve.Β
