  • 2 cups water
  • ½ cup sugar
  • 4 tamarillos
  • 300g rhubarb
  • 2 star anise
  • ½ cup sugar
  • Granola of your choice
  • 1 cup plain yogurt
  • 1 scoop Red Shot


Bring water and sugar to a boil.

Cut a small cross incision into the base of each tamarillo and poach for 10 mins.

Remove from heat, peel and let cool. 

Cut rhubarb into 5cm lengths and place in a roasting dish with sugar and star anise and bake in the oven for 30 mins.

Remove star anise and let cool. Mix in the scoop of Red Shot. 

Serve tamarillo and rhubarb in a bowl, top with yoghurt and your favourite granola.
