Ingredients
- 1 orange Kumara sliced into rounds and roastedΒ Β
- 1 small onion - dicedΒ
- 2 cups spinach - freshΒ Β
- 2 heads broccoli Β
- 1 cup peasΒ
- 150g cream cheeseΒ
- 150g blue cheeseΒ Β
Egg Mix
- 10 eggsΒ
- Salt and pepper (to taste)Β
- 100mls creamΒ
- 1 scoopΒ Green Shot
Method
Lay the roasted Kumara rounds in a large, greased pan. Then layer with onion, peas, spinach, and broccoli adding the cream cheese in dollops in even spacing.Β Β
Crumble over the blue cheese.Β Β
Whisk all egg mix ingredients together, then pour the egg mixture evenly over cover with foil.Β
Bake in 170Β°C oven for 30mins or until egg mix is set.Β Β
AllowΒ to cool before tipping out of the pan and cutting.Β Β
Serve with beetroot chutney.Β Β
