BBQ Lamb Rack with spicy rub
Serves 4, Prep 5 mins, Cook 20 mins
2 x trimmed NZ Lamb Racks
- 1 tbsp paprika
- 1 tbsp salt
- ¼ tsp dill
- ¼ tsp celery salt
- ¼ tsp rosemary
- ¼ tsp garlic powder
- ¼ tsp black pepper
- 1 scoop Red Shot
- Combine all rub ingredients and massage into the lamb.
- Sear the racks in a pan with olive oil for 3- 4 minutes and transfer to an oven at 180 degrees for 15 minutes.
- Let rest for 20 minutes, and then cut into cutlets as a snack or cut in half as main meal.
